This Diastatic powder has transformed my sourdough. Makes it lighter and spongier, ideal for making sandwiches. One bag lasts ages as you only need 1/2 tsp per loaf

The product definitely improve long fermentation by about 25%. Bread texture & flavour is really improved. Dough is easier to handle. I only need to fine tune the baking temperature & time as the centre of my loaves is slightly under baked & is sticky when sliced. Very pleased with the product.

This subject is close to my heart, having done my time as an apprentice baker in the 1960s i know about diastactic and non diastactic malt, and the fact that the over night fermentation,which i was taught allows the enzymes and proteins to react and produce folic acid, this never can happen with the chorleywood method of no time dough's, formulated to supply supermarkets with un healthy, what they call bread, In the opinion of many this is the cause of the mass cases of gluten intolerance we see today, the staff of life has been hijacked by the no time dough's and its a dammed shame, in my time we made crusty open texture loaves, they did not have to keep, because the never did, they were that good. Please excuse my rant, its just the image of your loaves stirred my memories to action. regards martin.
